Coconut (Nariyal) Burfi




Ingredients: 

Coconut powder 3 cup
Sugar 3 tbsp.
Water 5 tbsp
Essence 1 drop.
Cardamom powder 1 tsp and some almonds

 
Directions:
  1. Heat Sugar and water until sugar dissolves completely.
  2. Then boil the syrup.
  3. Add coconut powder,saffron, cardamom powder.Mix well.
  4. Remove from heat and spread in a plate. Cut to 8 pieces.
  5. Add almonds on the pieces.

Asoka Halwa Recipe

 

Ingredients
Ghee - 1 cup
Cardomoms - 6
Cashewnuts - 10
Asoka Halwa Recipe
Moong dal - 1 cup
wheat flour - 1 cup,
Sugar - 11/2 cup
Kesari powder - 1/4 tsp
Chopped almonds - 2 tsp
Add 1/2 cup water to 1 cup moong dal and cook in pressure cooker until it becomes soft.

Method
  • To 1 cup wheat flour, add 1/2 cup waterand make into a thick liquid.
  • Heat this liquid in a fry pan and stir for a while.
  • Mash the cooked moong dal and add it to the boiling liquid.
  • When everything is mixed and well cooked, add sugar and stir well.
  • Add 1/2 cup of ghee and keep stirring.
  • When it is almost over add cardomoms.
  • Roast cashews in 1 tsp ghee and add it to the mix.
  • Add the remaining ghee and stir.
  • It should become a non sticky paste but not too hard.
  • At this stage remove the pan from the stove.
  • Pour this mix on a large plate greaseed with ghee.
  • Spred the cashew and cheery bits on the top surface of the halwa.
  • Then cut this into diamonds by drawing parallellines with a knife.






Rava Upma Recipe




Ingredients

1/2 tsp Turmeric Powder
Chili powder to taste (optional)
2 tblsp Oil
Few curry leaves
Finely chopped corianderleaves
1 tblsp Ghee
1 tsp Mustard Seeds
1 tsp Urad Daal
Lemon juice to taste
1 cup Rava / Sooji (Semolina)
25 gms fried Cashew Nuts (optional)
1 inch Ginger chopped
1 chopped Onion
3 Green Chillies slit sideways
1 Potato chopped
1 Capsicum chopped
1 Carrot chopped
1/4 cup Green Peas frozen or fresh
1 tsp Channa Daal
Salt to taste


Method

  • Sieve rava through a fine sieve.
  • Heat 1tbsp. pure ghee / unsalted butter and fry rava ,on a moderate heat, stiring constantly to light brown color and set aside. do not burn the rava.
  • Now heat 2 tbsp oil in a pan and add mustard seeds and allow them to splatter.
  • Add the daals : channa & urad & curry leaves to it and fry till they turn red.
  • Add onion, ginger and green chilies. Sauté for 2-3 minutes.
  • Add all the vegetables, turmeric & chili powder, and salt to taste.
  • Now add 3 cups of water and cover the pan and allow it simmer on low heat until the vegetables are done.
  • Add the fried rava to it stirring constantly till it becomes little thick.
  • Take off from the heat and lemon juice if desired.
  • Serve hot and garnish with cashews and coriander.
  • serve during breakfast.  
  • (one can also cook upma using sooji (semolina) instead of rava if rava isn't available)


Bottle Gourd Curry With Sesame Seeds Recipe







Ingredient
1 cup bottle gourd
1 tbsp coconut powder
½ tsp coriander powder
1 springs curry leaves
½ tsp Ginger garlic paste
4 number green chillies
1 tbsp oil
1 number onion
1 tbsp sesame seeds
Pinch of Turmeric
urad dal
Water as needed

Method

  • Take a pan heat it add sesame seed dry roast till golden brown colour optional coconut powder grind into a corse powder.

  • Take a pan heat oil, add urad dal, onions chopped,salt saute it then add  green chillies, turmuric, ginger garlic paste, curry leaves saute it then add small pices of bottlegourd and mix well add some water and close it with a lid.

  • cook the bottle gourd till it is 80% done then add the sesame seeds powder, coriander powder saute it again and cook for another 3 -4 min.

Palak Moong Dal Fry Recipe




Ingredient

1 springs curry leaves
6 number Garlic
½ tsp ginger garlic paste
4 number Green chili, sliced
1 tbsp Oil
1 number Onion
Salt to taste
1 bunch Spinach
½ cup split moong dal
1 pinch Turmeric
1 tbsp urad dal


Method

  • Take a pan heat oil add urad dal, saute it then add garlic cloves, green chillies saute it now add sliced onions cook till onions are transparent.
  • Now add moong dal cook for few mins then add ginger garlic paste mix well then add turmeric saute it.
  • Add chopped palak and salt as per taste.
  • Sauté it and cook the palak with out closing it with a lid.
  • Serve hot.
